I posted about my admiration of Gwyneth Paltrow a few weeks before People Magazine voted her the world's most beautiful woman. I think she deserves it. Congratulations Gwyneth.
As a matter of fact, I purchased her cookbook My Father's Daughter recently and have made a few of the recipes. The Fried Zucchini Spaghetti is delicious!
If you omit the parmesan, it's vegan. Yay! The Carmelized Brussel Sprouts - also delicious. I love Brussel Sprouts cooked this way. If you hate brussel sprouts or think you hate brussel sprouts, try them this way. I love that she steams them for a few minutes and them transfers them to a pan to cook them the rest of the way. I have used Rocco DiSpirito's recipe that calls for oven roasting. That recipe is quite good but I hate to have to use the oven in the summer. So GP's recipe is perfect. I also love the Miso Soup. Very simple. Very tasty.
All the recipes are relatively healthy. I can't wait to try her Mac and cheese recipe. I have not always had success with mac and cheese although I've heard tell that it's supposed to be the easiest thing to make. Her recipe calls for mascarpone and parmesan as the cheese base. Interesting! I am trying to stay on my vegan diet right now because I have a doctor appointment coming up and I want to see if my triglycerides normal out. But if I do well, I will reward myself with this recipe. At least a few bites. I'll leave the rest for the kids.
I might even buy her new book, It's All Good, before it's old enough to be cheap.
